SALSA 
6 lbs. tomatoes (12)
1 lb. onions (2 lg.)
1 lb. green peppers (2)
1 lg. red pepper
1 1/2 c. white vinegar
1 tbsp. & 1 tsp. salt
2 tsp. dry mustard
2 tsp. granulated sugar
2 tsp. chili powder
1 tsp. garlic powder
3/4 tsp. ground cumin
1/2 tsp. ground black pepper
1/8 tsp. crushed pepper flakes

Peel, chop and seed tomatoes. Allow to drain. Clean and chop peppers. Combine all and bring to a boil. Reduce heat to medium and cook. Stir occasionally 45 minutes to 1 hour or until thick. Pour into jars 1/4 inch from top. Process 20 minutes. Makes 4 (8 ounce) jars. 10 calories per tablespoon.
