FARMER'S BREAKFAST 
1/3 c. chopped onion (optional)
1/4 c. chopped green pepper (optional)
2 tbsp. cooking oil
2 c. cooked ham, cut in strips
1 (9 oz.) pkg. frozen French fries
4 beaten eggs
2 tbsp. water
1/4 tsp. salt

Partially thaw fries and chop, or use chunky hash browns

Cook onion and green peppers in oil until tender-crisp. Add ham and potatoes; cook until potatoes are tender. Combine eggs, water and salt. Pour over ham mixture. Cook over low heat, turning occasionally, until eggs are set. Makes 4 servings.

WOW! That was great! I didn't have any ham so I used a lb. of ground sausage. I also substituted seasoned fries. My family raved about this dish for hours!
