CHICKEN & TORTELLINI SALAD
VINAIGRETTE
 
1 qt. water (for boiling chicken)
1 lb. chicken breasts
1 pkg. frozen tortellini
1 pt. cherry tomatoes
1 bunch asparagus

VINAIGRETTE:

1/2 tsp. salt
1/2 tsp. pepper
3/4 c. olive oil
1/4 c. white vinegar
1/2 tsp. dry mustard
2 cloves garlic

Make vinaigrette dressing by mixing all ingredients together in a jar, shake well and let stand as long as possible. Boil chicken until cooked (about 1/2 hour). Remove chicken from water.

In the same water cook tortellini according to package directions, when cooked remove from water but reserve water and cook asparagus in same water until tender. When cooked ingredients are cool, cut chicken and asparagus into chunks. In a large bowl put chicken, tortellini, asparagus and tomatoes. Toss with vinaigrette dressing.
