APRICOT NECTAR CAKE 
1 angel food cake (baked)
1 3/4 c. sugar
6 tbsp. cornstarch
24 oz. (3 c.) apricot nectar

In a saucepan, stir together sugar, cornstarch and apricot nectar. Stir and cook until thick and clear. In an oblong cake pan, break up an angel food cake. Pour the apricot sauce over the cake. Stir gently. Chill. Spread Cool Whip over entire top. Sprinkle with coconut. Keep chilled.

I used peach nectar, and put a large can of apricots on top of torn angel food cake, then cool whip and coconut.
