SOFT PRETZELS 
3/4 c. warm water
1 1/2 tsp. yeast
2 c. sifted flour
1/2 tsp. salt
1 1/2 tsp. sugar

Dissolve the yeast in warm water. Sift and measure the flour. Sift together the flour, salt and sugar; stir this into yeast mixture with a wooden spoon until well mixed.

Knead the dough with your hands until all the dry mixture is absorbed; knead until the mixture is soft and smooth. Divide dough into equal parts and shape into pretzel shapes.

Grease cookie sheet. Place each pretzel carefully on the cookie sheet. Beat one egg with 1 teaspoon of water. "Paint" this mixture on the top of each pretzel. Sprinkle salt onto top of each pretzel. Bake at 450 degrees for 15 minutes or until golden brown.

Makes about 12 pretzels.
