STRAWBERRY PARFAIT PIE 
3 c. cottage cheese
1/4 c. Sprinkle Sweet
1 tbsp. lemon juice
1 c. pineapple
1 tbsp. butter flavor vanilla
1 1/2 c. frozen strawberries
2 env. unflavored gelatin red food coloring

Drain pineapple; save juice. Blend together cottage cheese, sweetener, lemon juice, flavoring, and pineapple; set aside. Soften gelatin in fruit juice and dissolve over low heat. Add cottage cheese mixture; fold in berries and food coloring. Pour into pie plate and refrigerate until firm.
