FISH AU GRATIN 
1 lb. frozen fillet of sole, flounder, or haddock
1/3 c. mayonnaise
1/4 c. grated Parmesan cheese
2 tbsp. fine dry bread crumbs

Brush each fillet with mayonnaise. Mix cheese and crumbs. Roll fish in crumb mixture. Place in baking dish. Sprinkle with remaining crumb mixture. Bake in preheated 375 degree oven until fish is lightly browned and flakes easily when tested with fork, about 20 minutes for frozen fish, 15 minutes for thawed or fresh fillets. Serves 3-4.
