DUTCHES POTATOES 
2 c. mashed potatoes, hot
1 tbsp. butter
1 beaten egg yolk
Salt and pepper
1 tbsp. melted butter

To the mashed potatoes, add 1 tablespoon butter, egg yolk, salt, and pepper. Grease a cookie sheet and dip potatoes onto the cookie sheet with an ice cream scoop. Drizzle each mound with melted butter. Bake in a 450 degree oven for 10-12 minutes. 4-6 servings.

Great way to use leftover mashed potatoes.
