HOMEMADE SALAMI 
5 lbs. hamburger
5 rounded tsp. kosher or curing salt
2 1/2 tsp. mustard seed
2 1/2 tsp. black pepper
2 1/2 tsp. hickory smoked salt
2 1/2 tsp. garlic powder

Mix together with wet hands. Cover and place in refrigerator for 3 days. Mix again each day. Fourth day, mix and divide into 5 portions, shape into logs and bake on broiler pan at 175 degrees for 5 hours. Freeze. Be sure to pack logs tightly.
