WHITE TURKEY ENCHILADAS | |
2 c. ground cooked turkey 3 cans cream of chicken soup 1 c. sour cream 1 can pitted olives 1 tbsp. minced onion 1 tbsp. parsley flakes 1 pkg. flour tortillas 3 c. grated Cheddar or Tillamook cheese Brown turkey and drain. Set aside. Mix soup, sour cream, onion and parsley. Mix 1/3 of this mixture with turkey. Spoon about 1 cup of soup mixture into bottom of 9x13 casserole dish. To prepare tortillas, spread a spoonful of meat mixture onto tortilla. Sprinkle with cheese. Put 2 olives on top of cheese and roll up tortilla. Place in casserole. Do each tortilla the same. When all 10 are in the pan, cover with remaining soup mixture. Sprinkle with remaining cheese. Dot with remaining olives. Bake at 350 degrees for 30 minutes. |
