ON BROADWAY SPAGHETTI SAUCE AND
MEATBALLS
 
SAUCE:

3/4 c. chopped onion
2 (6 oz.) cans tomato paste
2 (1 lb.) cans tomatoes, cut up
1 1/2 tsp. oregano
1/4 tsp. pepper
1 c. water
1/3 c. grated Parmesan cheese
1 clove garlic, minced
1 tsp. sugar
1 tsp. salt
1 c. red wine
1 bay leaf

Cook onions and garlic in 3 tablespoons salad oil, low heat until tender. Add remaining ingredients, simmer for 2 to 3 hours.

MEATBALLS:

4 slices bread
1/3 c. grated Parmesan cheese
1/2 c. water
1 tsp. oregano
2 eggs
2 tbsp. parsley
1 lb. ground beef

Soak bread in water for 5 minutes. Add eggs; mix thoroughly. Add remaining ingredients. Form mixture into 1 tablespoon balls. Brown in 2 tablespoons salad oil. Add to sauce. Serves 4.
