YORKSHIRE CHICKEN | |
1/4 c. oil 1/3 c. flour 2 tsp. salt 1/4 tsp. pepper 1 broiler-fryer, cut up Yorkshire Pudding 1. Pour oil into 13x9 pan. Combine flour, salt and pepper in plastic bag (bread crumbs). 2. Shake chicken in mixture. Rub chicken, skin down in oil. Turn. (Do not add more oil.) 3. Bake in hot oven (400 degrees) for 40 minutes. While chicken bakes, prepare Yorkshire Pudding. YORKSHIRE PUDDING: 1 c. flour 1 tsp. baking powder 1 tsp. salt 1 1/2 c. milk 3 eggs 1/4 c. dried parsley Mix dry ingredients in medium bowl. Gradually beat in milk, eggs and parsley. After chicken has baked 40 minutes, pour pudding batter over the hot chicken and bake 20-25 more minutes (do not remove excess fat from pan) or until Yorkshire Pudding is puffed and brown. |
