SWEET - MILK PANCAKES 
2 c. sifted flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. brown sugar
3 eggs
2 tbsp. melted butter
2 c. milk

Sift flour, baking powder, salt, and brown sugar together and put in mixing bowl. Separate eggs and beat whites until fluffy and set aside. In another bowl, beat together egg yolks, melted butter, and milk. Mix together wet and dry ingredients, except egg whites. Then fold egg whites into batter. Transfer batter into large, measuring cup or pitcher. Heat griddle and lightly grease it with butter or oil. For each pancake, pour about 1/4 cup batter onto hot greased grill. Cook until pancake is full of bubbles and underside is nicely browned. Turn with spatula and cook until brown on other side. Yields: About 15 pancakes. Serve with syrup, butter, honey, jam, or sliced fruit.
