WILD RICE SOUP 
2/3 c. wild rice (soak overnight)
1/4 c. chopped onion
1/4 c. chopped carrots
1/4 c. chopped celery
1/8 c. chopped green peppers
4 c. chicken broth

Saute the wild rice, onion, carrots, celery, and green peppers in a little butter. Add broth and simmer 2 hours; then add the white sauce and serve. Makes 6 helpings.

WHITE SAUCE:

2 c. milk
1/4 c. flour
1/4 c. butter
1/4 tsp. salt

Melt butter; add flour and stir in milk. Keep stirring until mixture comes to a boil or thickens to your taste. Add to the wild rice mixture and serve.
