AUNT CLAIRE'S PRUNE AND APPLE
PUDDING
 
2 tbsp. oil
18 lg. stewed and pitted prunes
4 lg. apples, pared
1/2 c. matzah meal
1 c. sugar
4 eggs, slightly beaten
Juice of 1 orange
Juice of 1 lemon

Stew prunes. Cut prunes into quarters. Slice apples on grater. Heat oil in pan. Mix all ingredients. Put into casserole dish and cover. Bake at 350 degrees for 50 minutes.
