GRANDMA'S BAKED APPLE PUDDING | |
Peel and slice apples (enough to fill casserole 3/4 full). 1 egg 1/2 c. milk 1 c. flour 2 tbsp. sugar Salt 1 heaping tsp. baking powder SAUCE: 1 c. sugar 2 tbsp. cornstarch Salt 2 c. boiling water Juice of 1 lemon Dash of nutmeg Place apples in casserole. Mix egg and milk together well. Add flour, sugar, salt and baking powder. Mix well and spread over apples. Bake at 350 degrees until apples are done. Sauce: Combine sugar, salt and cornstarch in saucepan and mix well. Stir in water, juice and nutmeg and cook until slightly thickened. Serve with pudding. Can be served either hot or cold. This was handed down from my grandmother and was a favorite of her Irish grandmother. |
