ED'S 4-POUND STUFFED LOBSTER 
1 stick butter
1 lb. seafood mix
1 (8 oz.) bottle clam juice
1/2 lb. (2 tubes) Ritz crackers
4 lbs. lobster, any combination

Seafood Mix: Any combination of shrimp, scallops, imitation crab meat, minced clams. Add chopped mushrooms if desired. For every 2 pound lobster = 1/2 pound mix.

In a large deep frying pan (Teflon preferred), melt butter on simmer setting. Add clam juice and scallops and simmer for about 5 minutes or until scallops are cooked. Then add seafood mix and simmer for another 5 minutes. Combine warm mix, butter and Ritz crackers and mix. Consistency should be moist but not soupy. More crackers or clam juice can be added if necessary.

Set out a large pan with cover to cook the lobster(s). Have sufficient water to just cover the lobsters. Bring water to a boil and insert lobsters. Wait for water to return to a boil and use this cooking formula: 15 minutes for first pound, add 3 minutes for each additional pound - (Example: 4 lbs. = 24 minutes).

Drain lobsters into sink. While lobsters and stuffing are still warm, clean out front cavity of lobster, back to the beginning of the tail. Stuff with mix. Broil about 7 minutes until top of stuffing is light brown. Poor Man's Lobster - Eliminate lobster and broil stuffing in Pyrex dish. Enjoy!
