“IRISH SODA BREAD” IS IN:

IRISH SODA BREAD 
1 tablespoon baking soda
1 tablespoon sugar
4 cups flour
1 1/3 teaspoons salt
1/4 teaspoon cream of tartar
2 cups buttermilk
1 tablespoon butter

Thoroughly combine baking soda, sugar, flour, salt and cream of tartar. Make a well in the center. Add buttermilk and mix lightly and quickly with a fork.

Turn out onto a lightly floured board and knead for one minute. Shape into a circle, about 1 1/2 inch thick. Place on a greased cookie sheet. Slash a large cross in the top.

Bake in a preheated 375°F oven for 40-45 minutes.

Cool on a wire rack. Brush top with butter while still warm. Cool before slicing to serve.

Variations: 1 cup raisins, craisins, citron or dried fruits and a few tablespoons caraway seeds may be added. 1/2 yogurt or sour cream and 1/2 milk may be substituted for buttermilk.

Very good bread. The dough was too sticky so I reduced the buttermilk to 1 3/4 cup. The dough was still a little sticky but became very manageable when I kneeded it on flour. I have never needed more than 35 minutes of baking time.

This recipe works really well. The consistency of the bread is nice. But it is salty. Next time I would probably only add 1 tsp of salt to it.
