MARINATED ZUCCHINI 
3 med. zucchini, thinly sliced
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 c. chopped celery
1 tbsp. chopped pimento
1/3 c. cider vinegar
1/4 c. sugar
1/4 c. vegetable oil
1 tbsp. white wine vinegar
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. hot sauce
Chopped green onion blade

Combine first 5 ingredients, toss lightly. Combine cider vinegar and next 6 ingredients; mix well and pour over zucchini mixture. Cover and chill 8 hours, stirring occasionally. Garnish with green onion.
