LOW CHOLESTEROL MARINATED
VEGETABLES
 
Carrots, sliced
Zucchini, sliced
Cherry tomatoes
Broccoli
Cauliflower
Celery chunks
Baby corn
Mushrooms

MARINADE:

1 c. olive oil
1/2 c. white vinegar
1/2 c. water
1 tsp. sugar, thyme, marjoram, basil, pepper
1 lg. garlic clove, minced
1 lg. bay leaf

Mix the marinade. Add the vegetables and store in the refrigerator for several hours. Drain the vegetables and place in bowl to serve.
