BEETS AND PINEAPPLE 
2 cans small beets
1 can unsweetened pineapple chunks
1 tbsp. cornstarch
1 tbsp. sugar
1 tbsp. lemon juice
1 tbsp. butter

Use all of pineapple juice and half of the beet juice. Add the cornstarch, sugar and lemon juice. Bring to a boil. Add butter and boil about 30 seconds or until liquid becomes glossy and thickened. Add beets and heat thoroughly. Add pineapple last. May be served hot or cold.
