BREAKFAST CASSEROLE 
1 lb. pork sausage
1/4 c. chopped onion
1/4 c. chopped green pepper
1/4 c. chopped celery
1/4 c. chopped green chilies
1 tsp. salt
1 tsp. dry mustard
2 c. milk
6 to 8 eggs, slightly beaten
6 slices white bread, cubed
1 c. sharp cheddar cheese, grated

Fry sausage and crumble. Drain reserving 3 tablespoons fat. Saute onion, green pepper, celery and green chilies in reserved fat. Mix all ingredients and place in 9 x 12 greased baking dish.

Bake at 350 degrees for 1 hour. Yield 10 servings.
