POPPY SEED POORI 
1 c. sifted flour
1 c. stirred whole wheat flour
1 tbsp. poppy seeds
1/2 tsp. salt
2 tbsp. vegetable oil
1/2 to 2/3 c. water
3 c. vegetable oil

Stir together first four ingredients. Stir in 2 tablespoons oil and enough of the water to make a very stiff dough. Knead dough until smooth. Cover with plastic wrap and let rest 20 minutes. Divide dough into 20 pieces; shape each into a ball. Cover with plastic wrap to keep from drying out.

Heat oil to 400 degrees, check with a thermometer. On a lightly floured surface, roll out each ball to a 4 inch circle. Cover with plastic wrap. Fry circles, one at a time, in hot oil about 10 seconds, using back of a slotted spoon to hold circle under oil until it puffs up. Turn and fry 10-20 seconds more or until lightly browned. Remove and drain on paper towels. Serve warm. Makes 20 poori.
