POOR MAN'S LOBSTER 
1 lb. turbot fillets, thawed (or other fillets)

Cover with water in pan and add:

3 tsp. salt
1 1/2 tsp. white vinegar

Simmer, uncovered, until just tender, about 1/2 hour.

Drain. Lay fillets in baking dish in a single layer. Drizzle with melted butter. Broil until it just curls. Serve with lemon and melted butter.
