AUNT ETHEL'S APPLESAUCE CHRISTMAS CAKE | |
2 1/2 cups applesauce 1 cup (2 sticks) butter or shortening 3 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. allspice 1/4 tsp. cloves 1/4 tsp. nutmeg 1/4 tsp. salt 2 cups sugar 1 lb. raisins 1 cup chopped English walnuts (may sub. pecans) 4 cups all-purpose flour Preheat oven to 350°F. Bring applesauce and butter to boil and add baking soda, let cool and add rest of the ingredients. Put mixture in large rectangle greased and floured cake pan or in several loaf pans. Bake at 350°F for about 1 hour. Best if wrapped in foil for about a week before serving. I never could wait, I like it warm. Serve with Cool Whip. Submitted by: Ray Johnson |
