CHICKEN ITALIANO | |
2 to 3 chicken breasts 2 c. fresh mushrooms 2 med. onions, cut into rings 2 lg. green peppers, cut into slices 1 (15 oz.) can crushed tomatoes 1 can prepared spaghetti sauce Garlic powder Salt and pepper Worcestershire sauce Place chicken in shallow baking pan, fill with 1/4 inch water. Add salt, pepper and garlic powder to taste. Cover with foil. Bake at 350 degrees for 1 hour or until done. Step 2 while chicken is baking, chop 2 cups fresh mushrooms, slice 2 medium onions into rings and separate, slice 2 large green peppers into thin slices or strips. In large skillet add enough oil or melted butter and saute the veggies. When onions become transparent remove from heat. Step 3, when chicken is done, remove skin and discard. Remove chicken from bone and break into chunks. Add chicken chunks to skillet with veggies. Add one can tomatoes crushed, 1 can (16 oz.) prepared spaghetti sauce, salt, pepper, garlic, dash of Worcestershire to taste. Place on low heat to simmer for 30 to 45 minutes. Goes well over any type noodles or rice. Serves 5 to 6. |
