1 c. leftover or instant mashed potatoes
1/2 tsp. vanilla
7 c. confectioners' sugar
Peanut butter, as needed

Stir vanilla into mashed potatoes. Add confectioners' sugar a little at a time until it is a clay like stiffness. Sprinkle a little confectioners' sugar on board or countertop. Take small amounts at a time and roll out with a rolling pin until 1/8" to 1/4" thick. Spread with peanut butter. Roll up like a jelly roll and slice.
