STUFFED BELL PEPPERS 
1 lb. ground beef
1 c. instant rice
1/2 tsp. cinnamon
1/2 tsp. clove
1/2 tsp. allspice
8 oz. tomato juice
1 tsp. salt & pepper (optional)
1/4 c. lemon juice
4-6 bell peppers, cleaned
Butter (optional)

Combine beef, rice and spices with a little tomato juice for moisture. Stuff mixture into peppers. Place in baking dish (may want to grease dish). Mix tomato juice and lemon juice together and pour over peppers. Place pat of butter over each pepper.

Cover and bake at 350 degrees for 1 hour and 15 minutes or until done. Or - cover with wax paper. Microwave on high for 15 minutes, turn 1/4 turn every 5 minutes. Wait a few minutes and check for doneness. May need 1-2 more minutes. If you prefer soft peppers, can boil peppers 5 minutes prior to stuffing.

Since microwave ovens vary in power, you may need to adjust your cooking time.
