GREEN SALAD WITH MANDARIN
ORANGES
 
1 bunch leaf lettuce
1 c. celery, chopped
1 sm. can mandarin oranges
3 green onions

Nut Topping:

1/2 c. pecans or almonds
1 tbsp. + 1 tsp. sugar

Heat nuts and sugar in pan until sugar has dissolved and nuts are coated. You may need to add a few drops of water.

Combine greens, dressing and nuts and serve immediately.

This salad will serve 4-6 people. Double the ingredients for a larger salad.

Dressing:

1/4 c. vegetable oil
2 tbsp. sugar
2 tbsp. cider vinegar
1 tbsp. snipped parsley
1/2 tsp. salt
pepper to taste
