FRUIT BARS 
2 c. flour
1 1/2 c. raisins
1 c. butter, melted
1 1/2 tsp. ground cinnamon
2 c. old fashioned oats, uncooked
2 ripe med. bananas (peeled)
1/4 c. packed brown sugar
2 tbsp. fresh lemon juice
2 tsp. freshly grated lemon peel
3/4 c. chopped walnuts (optional)
3/4 c. honey
2 tart med. apples
1 firm banana, peeled

Combine flour and oats, stir in butter, 1/2 cup honey and 1 teaspoon cinnamon until blended. Spread 3/4 oat mixture in greased 13 x 9 inch baking pan. Slice bananas in blender; whirl until pureed. Core apples; cut into small chunks. Combine pureed bananas, apples, remaining 1/4 cup honey, 1/2 teaspoon cinnamon, raisins, sugar, lemon juice and peel in medium saucepan. Cover simmer 10 minutes, stirring often. Uncover, simmer 10 minutes longer, stirring often, cool. Slice firm banana into apple mixture; add walnuts, if desired. Fold mixture in pan. Crumble remaining oat mixture over all. Bake in 400 degree oven, 20 to 25 minutes and cool. Cut into bars. Makes 15 bars.
