ZUCCHINI BREAD 
3 c. all-purpose flour
2 tsp. baking soda
2 c. sugar
1 tsp. salt
1 c. vegetable oil
1/2 tsp. baking powder
2 tsp. vanilla flavoring
1 1/2 ground cinnamon
2 c. coarsely shredded zucchini
3/4 c. chopped walnuts or pecans
3 eggs
1 can crushed, drained pineapple

Combine flour, soda, baking powder, salt, cinnamon and nuts; set aside. Beat eggs lightly in mixing bowl. Add sugar and vanilla. Beat until creamy. Stir in zucchini and pineapple. Add dry ingredients, stirring only until moistened. Spoon batter into baking pans, greased and floured.

Bake at 350°F for 1 hour or until done. Turn out on rack. Cool completely.
