ZUCCHINI BREAD 
2 c. diced zucchini
1 c. oil
3 c. flour
2 c. sugar
3 eggs
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1/2 c. pecans, chopped
2 tsp. vanilla

In blender, mix zucchini, oil and eggs. Sift together flour, sugar, cinnamon, soda, baking powder and salt. Stir in zucchini mixture. Add nuts and vanilla. Pour into 2 greased loaf pans.

Bake at 325°F for 1 hour.
