SPRING CASSEROLE 
1 sm. cauliflower
8 sm. new potatoes (I use more)
8 sm. carrots
8 sm. onions
1 c. fresh green peas (I usually add broccoli and yellow squash)
4 tbsp. butter
4 tbsp. flour
1 tsp. salt
2 c. milk
1/2 lb. American cheese

Steam vegetables; melt butter and stir flour in; add salt and milk; cook until thick; add cheese; stir until cheese is melted; pour over vegetables. Bake at 300 degrees for 20 minutes.
