SPANISH RICE (EASY) 
1/2 med. onion, chopped
1 c. long grain rice
1 tsp. salt, ground pepper
2 tbsp. shortening
1/2 green pepper, chopped
1 can (8 oz.) tomato sauce
2 c. water

Melt shortening in skillet. Add onion, green pepper, rice. Saute until rice starts to brown slightly. Add tomato sauce with water, salt, fresh ground pepper. Bring to a boil. Place lid on skillet and simmer until done. This recipe goes very well with ham BUT I like it with many things!

Sounds pretty good. I would personally use something like grapeseed oil or something like that instead of the shortening. As for the tomato sauce I like to use the liquid from a can of diced tomatoes as part of the 2 cups water. I take out the pieces of diced tomato and measure the liquid with water to make 2 cups. I throw in the diced tomatoes and also some peas. I try to limit my salt so I add 1/2 tsp. salt instead of 1 tsp.
