QUICHE LORRAINE 
1 9 inch pie crust
12 slices bacon, fried crisp and crumbled
1 c. shredded Swiss cheese
1/3 c. finely chopped onion
4 eggs
2 c. half and half
3/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne red pepper

Prepare pastry. Sprinkle bacon, cheese, and onion in pastry lined pie plate. Beat eggs slightly; beat in remaining ingredients. Pour egg mixture into pie plate. Cook uncovered at 425 degrees for 15 minutes.

Reduce oven temperature to 300 degrees. Cook uncovered until knife inserted halfway between center and edge comes out clean, about 30 minutes. Let stand 10 minutes before cutting.
