1 lb. minced beef 2 OXO (stock cubes) 4 potatoes (not too big but not too small) 4 onions (again not too big) 1 mug boiling water 1 tbsp. beef stock 1/2 tsp. cooking oil (sunflower is best) salt and pepper Peel and chop potatoes, cut into smallish cubes, bring to boil adding salt and pepper to taste... pinch of 2 is enough. Once boiling drain water and leave to cool. Chop 2 onions finely, peel other 2 onions leave whole. In frying pan put oil in and bring to smoking. Put in minced beef and chop finely until brown all over... Reduce heat. Add 1 stock cube (crumble over mince in pan). Stir well, continuing to chop with mince. Add chopped onions. Stir in well... Add remaining stock cube the same way. In a mug fill with boiling water over beef stock, stir well then add to mince. Put the remaining 2 onions into a casserole dish and pour the mince into casserole. Add the cubed potatoes, stirring them in well. Put the casserole into a 350°F preheated oven (175°C, gas mark 6) for 15 minutes. Stir after 15 minutes. Reduce heat to 300°F (150°C gas mark 4) and cook for a further 1 1/2 hours, stirring occasionally. Serve on a plate with a whole onion each and the mince and tatties. Enjoy! Serves 2.
