CHILE CON CARNE 
1 1/2 lb. ground beef
1 lg. onion, chopped
1 1/2 c. hot water
2 tsp. chili powder
4 c. canned or cooked kidney beans
2 1/2 c. canned tomatoes
Salt and pepper to taste
1 c. finely diced celery

Brown chopped meat and onion in deep heavy pan. Brown well, stirring occasionally. Add the water and chili powder, kidney beans and tomatoes. Season with salt and pepper and additional chili powder, if needed. Let the mixture simmer slowly for 1/2 hour. Then add celery and simmer until thick, about another 1/2 hour.
