JAN'S ARTICHOKE DIP 
1 can artichoke hearts, drained
1 c. mayonnaise
1 or 2 cloves garlic, minced
2 tbsp. grated onion or scallion
2 tbsp. parsley
3/4 c. grated Parmesan and Swiss cheese (more Swiss than Parmesan)

Drain and chop artichokes and add all other ingredients. Bake 300 degrees for 45 minutes. Serve with crackers and vegetables (carrots, zucchini, etc.)
