BANANA OAT STREUSEL MUFFINS 
1 1/4 c. flour
1 tbsp. baking powder
1/8 tsp. salt
2 egg whites, slightly beaten
1/2 c. skim milk
1/3 c. plus 1 tbsp. brown sugar
3 tbsp. plus 1 tsp. oil
2 c. oat flake cereal
1 c. finely chopped banana
1/2 tsp. cinnamon

Mix flour, baking powder and salt. Combine egg whites, milk, 1/3 cup sugar and 3 tablespoons oil. Add to flour mixture. Stir until just moistened. Stir in 1 1/2 cups cereal and banana. Spoon into greased muffin pans.

Mix 1/2 cup cereal, 1 tablespoon sugar and the cinnamon. Add 1 teaspoon oil. Stir until crumbly. Sprinkle over muffins. Bake at 350 degrees for 25 minutes or until tester comes out clean. Let stand 5 minutes. Makes 12 muffins.
