BIRD'S NEST COOKIES 
1 c. soft butter
1/2 c. brown sugar, packed
2 egg yolks, unbeaten
1/2 tsp. vanilla
1/4 tsp. salt
2 c. sifted flour
2 egg whites, unbeaten
1 1/4 c. finely chopped nuts
Jam, jelly or candied cherries

Heat oven to 350 degrees. Cream butter until light and fluffy, gradually adding brown sugar. Add egg yolks, mix well. Blend in vanilla, salt, flour. Shape dough into 1 inch balls, dip each in egg white, then nuts; on ungreased cookie sheet, place 1 inch apart. Bake 5 minutes. With thimble or end of wooden spoon, make depression in each. Bake 8 minutes. Cool; fill depression with jam. Makes 3 1/2 dozen.
