COFFE LAYER CAKE 
1/2 c. shortening
1 c. sugar
3/4 c. milk
2 eggs
3/4 tsp. salt
2 tsp. instant coffee
2 c sifted flour
3 tsp. baking powder

Combine shortening, sugar, eggs and salt. Beat until well blended. Sift together flour, baking powder and coffee. Add dry ingredients alternately with milk to first mixture. Beat until batter is smooth. Pour into 2 greased and floured 8 inch cake pans. Bake at 375 degrees for 30 to 35 minutes.

MOCHA ICING:

2 t. instant coffee
1/4 c. butter
2 c. sifted powdered sugar
1/4 c. hot water
2 tsp. cocoa

Dissolve coffee in hot water. In a large bowl blend together butter and cocoa. Stir in 3 teaspoons of liquid and 1 cup of sugar. Gradually add remaining sugar and liquid. Beat until smooth and creamy.
