FRESH COCONUT CAKE 
1 1/4 c. sugar
3/4 c. water or coconut juice
Coconut

Make 3 layers plain cake.

To make syrup: Mix sugar and water. Let boil until syrup is thick. Add coconut to mixture. Spread on each layer and press into cake.

FLUFFY BOILED ICING:

1 c. sugar
2 egg whites
3 tbsp. white Karo syrup
2 tbsp. cold water
1 tsp. vanilla extract

To make icing: Place sugar, egg whites, water and syrup in double boiler. Beat with mixer at high speed until thick (approximately 5 to 7 minutes). Cool. Add vanilla after cool. Spread on cake, sprinkle fresh grated coconut.
