PEPPERS AND POTATOES | |
1 lb. sweet peppers 1/4 c. olive oil or salad oil 1 clove garlic, minced 5 potatoes, peeled and sliced or cubed 1 c. tomato juice Salt and pepper Trim peppers and cut in strips lengthwise. Heat oil and saute garlic and onion in it. Add peppers and all other ingredients. Cook, covered, over low heat, 30 minutes or until potatoes are tender. Stir occasionally and add a little more tomato juice if necessary. Serves 4. |
