MEAT LOAF | |
1 lb. ground beef 1/2 lb. ground pork 1/2 lb. ground veal 2 slices fresh bread 1/2 c. coarsely cut onion 1/2 c. coarsely cut celery 1/2 c. coarsely cut green pepper 1/2 c. tomato soup 1 egg, beaten 1/2 tsp. pepper 2 tsp. salt Preheat oven to 350 degrees F. Place meat mixture in mixing bowl. Break bread in pieces. Place in blender container. Cover. Cover and blend on a medium speed about 5 seconds. Empty container and repeat for second slice of bread. Place remaining ingredients in blender container. Cover and blend on speed 6, a medium speed, about 10 seconds. Pour over meat mixture and mix gently, but well. Pack into greased loaf pan (9x5x3). Bake for 1 1/4 hours. Serve hot or cold. Yield: 8 servings. |
