ELMA'S BAHAMIAN BREAD 
1 pkg. yeast
2 c. warm water
1/2 c. plus 2 tbsp. sugar
1/2 stick butter or shortening
2 1/4 tsp. salt
8 to 10 c. flour

Mix yeast, water and 2 Tbsp sugar and let sit for 10 minutes. Add rest of sugar, butter, salt and 3 c. of flour and beat with mixer for 2 minutes. Add enough flour to make workable dough. Knead for 8 minutes. Let rise until doubled. Divide and shape into 2 loaves. Let rise until doubled again.

Bake at 350°F for 35 to 40 minutes until golden brown. Makes 2 loaves.
