RICE CASSEROLE 
1 c. diced celery
1 sm. onion, minced
3 tbsp. butter
1 can cream of mushroom soup
4 c. water
1 c. uncooked M.J.B. long grain rice
1 1/2 c. diced meat (leftover ham, pork, beef or chicken)

Simmer celery and onion in butter until tender. Add soup, water and rice, mix well. Cook over moderate heat for 15 minutes. Stir in meat. Pour into greased casserole. Bake, uncovered at 350 degrees about 45 minutes. Makes 4 to 6 servings.
