Pink Magic Rhubarb Pie

This is my moms recipe ever since I was a child and is amazing! The only difference is that she preapared the custard batter and added the rhubarb to coat the pieces well and then poured it into the pie crust. The sweet of the custard at the bottom and the tart of the rhubarb is perfect and still a family favorite. Can serve it solo or warm with some vanilla ice cream.

My mother in law has always used this recipe. It's not officially spring until we've enjoyed a slice (or 2) of this sweet and tart classic!
