CHICKEN BARBECUE | |
3 lb. frying or roasting chicken, cut into pieces 1 med. onion, finely chopped 1 clove garlic, minced 3/4 c. tomato ketchup 3/4 c. water 2 tbsp. vinegar 2 tbsp. Worcestershire sauce 1 tsp. pepper 1 bay leaf Arrange chicken in a single layer (skin side down) in a large, shallow foil- lined roasting pan. Thoroughly mix remaining ingredients (add bay leaf after mixing). Pour over chicken. Broil 6" to 8" from high heat for about 20 minutes, turn chicken skin side up, basting often with sauce in pan. Broil until chicken is tender. |
