BARBARA'S SUNDAY ROAST 
3 to 4 lb. roast
Salt and pepper to taste
8 oz. bottle Catalina salad dressing
1 onion, thinly sliced
1 c. sliced celery
1 tbsp. parsley
A package of brown gravy mix
1/4 c. water

Trim fat from meat, season with salt and pepper. Place in deep bowl. Combine, Catalina dressing, water, onion, celery and parsley, pour over roast. Cover and refrigerate over night. (Turn). Drain meat, reserve marinade. Combine gravy mix with marinade and pour over roast. Cover and bake at 300 degrees for 2 1/2 hours or until tender. Remove meat. Thicken marinate for gravy.
