3 c. cooked rice 2 sm. onions, minced 4 med. tomatoes, peeled and chopped or 1 c. tomato puree 2 tbsp. fresh coriander or cilantro 1 c. green salad olives Combine ingredients and cook until warm through. ADDITIONS: You may add 1 pound diced cooked ham and 2 cups frozen peas, thawed 1 package frozen mixed peas and carrots, thawed 1 pound cooked, shelled shrimp When served with refried beans, the dry soup makes a complete meal. |
